I began my ultimate reset journey on May 18, 2016. I do have to say that I am very pleased with my ultimate reset results! Not only did I lose weight and inches around my body, but I learned how to prepare food that I had never eaten before in my life. Surprisingly, I was introduced to a lot of vegetables and grains I’ve never even heard of. For example, I had never heard of millet. It is a fine grain that goes great with veggies such as diced cucumber and tomatoes with appropriate seasonings. I was also introduced to fennel bulb, collard greens, coconut milk, and tempeh to name just a few of the items.
A lot of the meals I ate were straight vegetables. Two or more vegetables mixed with a lot of seasonings and different types of vinegars. The meals were so filling, which really surprised me! Previously I would not have thought that eating only vegetables for a meal would be satisfying. Most lunches added in pumpkin seeds along with a salad and other vegetable type dishes. Dinners were normally just vegetables. Breakfasts’ consisted primarily of fruits, with oatmeal one day and another grain on a different occasion.
Ultimate Reset Recipes
I truly enjoyed this three week journey and all of the different types of foods and preparations. A lot of these recipes I am keeping and adding into my regular menu. If you hadn’t figured it out yet, the Ultimate Reset is a vegan diet. The first week is the only week that is not fully vegan, but vegan options are given on the non-vegan dishes if you are a vegan. Even though I am not a vegan, I enjoyed 99% of the recipes. Now that I am done with my journey, I will definitely be incorporating meat and dairy back into my diet. At least I have a bunch of healthy, natural choices to include in my diet.
Here is a small sampling of some of the dishes I got to eat during these three weeks.
