I threw together this scrappy chicken soup yesterday for dinner. I had quite a few vegetables in my refrigerator that I wanted to use before they went bad. It has been cold out, and I had not been feeling too good, so I thought soup would be the perfect feel-good meal! I decided that a soup similar to vegetable beef soup would be good, except that I did not have any beef. I did however, have some canned chicken which I thought would be perfect. I began dicing and slicing and put everything together to cook. Let me tell you, it turned out very good! I had a friend over for dinner and even she enjoyed the soup.

I had leftover soup today for lunch, and it has since thickened a little since last night, and is still very delicious! The scrappy chicken soup reheats just as well if had been made fresh all over again. Even better, that it was made with fresh ingredients. Give it a try and let me know what you think.

Instructions
  1. Bring water with chicken bouillon cubes to a boil and make sure cubes are dissolved in the water.
  2. Add salt, pepper, and garlic. Bring heat down to medium.
  3. Add carrots, celery, onion, corn, bell pepper, rotel tomatoes, and chicken.
  4. Let simmer for about 20 minutes or so, and then remove from heat. Serve. Enjoy!
