I first came across the Moroccan carrot salad when I began doing the 3 Day Refresh. This is also part of the 21 day fix eating plan and exercise program. The first time I made it I messed up because I didn’t begin to make it until it was dinner time. The reason that was a mistake is because it needs to marinate for 2-3 hours first. So, my dinner was substantially delayed while I waited for it to marinate! I remember only letting it marinate for an hour because by that time, I was starving! Let me just say, it was still delicious. I have made it numerous times since then because it is very good and healthy. You may eat this as a meal, or as a side dish. It just depends on if you are doing a specific eating plan where it says eat the Moroccan carrot salad as the main dish. If you are not doing a specific eating plan, then by all means eat it as a healthy side dish. I guarantee your family and guests will love it. The Moroccan carrot salad is definitely a nice twist to your traditional side dish. If you happen to be doing the 21 day fix eating plan, than this dish is equal to 1 green container and 1/2 of a serving of a healthy oil.

  1. Mix all ingredients together in a bowl and let marinate, covered, for 2-3 hrs in refrigerator before eating.
Recipe Notes

1 dash equals 1/16 of a teaspoon. Yes, you are able to get measuring spoons with this measurement!
