Low Carb Pizza (Keto Approved)

Even though this is a low carb pizza recipe that is keto approved, here is some insight on what and why I am doing this. On June 12, 2017 I began my journey with keto, which just so happens to be exactly 3 weeks ago. Wow, how time flies! Unfortunately, a week after I began eating keto, we went on vacation. Within that first week I had dropped 3 pounds though which was a nice surprise. Realistically, it was probably just water weight; But us women love to see the numbers on the scale drop! Am I wrong? Even though I cheated a little bit while I was on vacation, I managed to lose 2 more pounds. This makes my weight loss a total of 5 pounds so far. Woohoo!!! Read about my weight-loss journey here.

Anyway, the whole point of today’s post is to share a brand new low-carb, keto-approved single serving pizza! I made this exact one today and OMG it is so delicious! The crust even has the consistency of real bread-like crust, but without all the carbs! This will surely become your new favorite if you give it a chance. Guaranteed!

UPDATE: I have since made this for my dad, my dad’s girlfriend, and my husband. Even my kids were wanting some of their own after trying a bite. This recipe is a keeper!

Instructions
Pizza Crust
  1. Pre-heat oven to 350 degrees.
  2. Drain the can of chicken and place on a plate or paper towel to get as much liquid as you can off. (I placed the chicken on a paper towel and then blotted it with another paper towel).

  3. Lay the chicken flat on a pizza pan (without holes) and spread out. Bake for 10 minutes.
  4. While the chicken is 'drying', place 1 egg and 1 oz. of Parmesan cheese in a bowl and mix together. When the chicken is done, add it to the bowl and mix thoroughly. **Change oven setting to 500 degrees**

  5. Once the oven is at its new setting (500 degrees), add the mixture back onto the pizza pan and roll out as flat as you can in a circle. You want this to look like a pizza crust.

  6. Bake for 10 minutes. Once done, leave oven at 500 degrees while you add the toppings.
Pizza Toppings
  1. Add the toppings to the pizza crust. You may add in any order, but here is what I did: 1. Spread mozzarella cheese on the crust evenly. 2. Add the pepperoni slices, slightly overlap, and does cover the entire pizza. 3. Crumble the cooked bacon into pieces and place on top of the pepperoni.

  2. Bake for 5 minutes. Let cool.

  3. Slice and enjoy!
