Low Carb Pizza (Keto Approved)
Even though this is a low carb pizza recipe that is keto approved, here is some insight on what and why I am doing this. On June 12, 2017 I began my journey with keto, which just so happens to be exactly 3 weeks ago. Wow, how time flies! Unfortunately, a week after I began eating keto, we went on vacation. Within that first week I had dropped 3 pounds though which was a nice surprise. Realistically, it was probably just water weight; But us women love to see the numbers on the scale drop! Am I wrong? Even though I cheated a little bit while I was on vacation, I managed to lose 2 more pounds. This makes my weight loss a total of 5 pounds so far. Woohoo!!! Read about my weight-loss journey here.
Anyway, the whole point of today’s post is to share a brand new low-carb, keto-approved single serving pizza! I made this exact one today and OMG it is so delicious! The crust even has the consistency of real bread-like crust, but without all the carbs! This will surely become your new favorite if you give it a chance. Guaranteed!
UPDATE: I have since made this for my dad, my dad’s girlfriend, and my husband. Even my kids were wanting some of their own after trying a bite. This recipe is a keeper!
